I know it’s not Easter time, however, this egg salad can be enjoyed all year round and it’s one of Lide’s family favourites – so thanks for sharing!!
4-5 hard boiled eggs, peeled and cut into cubes
1-2 tomatoes, washed and cut into cubes
1-2 green peppers/banana chilies (or 1 small capsicum), cored seeded and cut into cubes
60-100g feta cheese, coarsely crumbled
Red wine vinegar
Freshly cracked black pepper (optional)
1) In a bowl combine cut egg, tomato, chillies and cheese. Drizzle over 2-3 tablespoons of olive oil, 1-2 tablespoons of vinegar and salt t taste. Mix well and serve with fresh crusty bread.
